Swordfish Tacos / Nachos

Ingredients

  • 1kg Swordfish

  • 1 Packet Taco Seasoning

  • 4 Corn

  • 1 Bunch Coriander

  • 6 Roma Tomato

  • 1 Red Onion

  • 1 Tub Sour Cream

  • 1/2 Cabbage White

  • 1 Pack Tortillas

  • 3-4 Limes

  • Olive Oil

Method

  1. Cover Swordfish in spice mix and place in pre-heated oven at 180 degrees – cook for 40min-1hr, depending on size of Swordfish.

  2. Roast corn in husk over a naked flame to blacken and cook.

  3. Strip corn of cob and place in bowl.

  4. Dice onion and tomato, and place in bowl with chopped coriander – season with salt, pepper, splash of olive oil and juice of 1 lime.

  5. Shave cabbage and place in a bowl.

  6. Lightly char tortillas over a naked flame and place on a plate (or swap tortillas for nacho chips)

  7. Cut wedges out of limes.

  8. Place everything on the table and construct your tacos with what you want. Enjoy!!
